This isn’t a Penn & Teller magic trick that involves Penn & Teller; it’s actually from a part of their show on Showtime. The episode in question was “Numbers.”
In this video, Penn & Teller uses a magician named Michael Close to get an extra $10 from a street vendor.

In visual perception, change blindness is the phenomenon where a person viewing a visual scene apparently fails to detect large changes in the scene.
This is a video of an experiment in change blindness in which a person has a sign a form and hand it back to the person behind the counter. That person then ducks down and another person rises from behind the counter.

I kid you not. In Japan, there’s an actual game show where someone (a woman in this case) has to change into her bikini in under 60 seconds. What happens if she takes longer? Take a guess.
American producers, take notes.
